RABO DE VACUNO CON MANGO

BEEF TAIL WITH MANGO

INGREDIENTS:

  • Rul Rabo de Vacun by Gbech

  • Mango marmalade
  • Rosemary
  • beef bones
  • Vegetables (Onion, Tomato, Leek)
  • Red wine
  • Flour, Water and Salt

(⏱️Preparation time: 30 min)

Defrost the beef rul for 24 hours. We cut it into slices, in this case 4 thick sheets. Seal in a frying pan and take to the oven at 180º. Now we prepare a reduction with a dark background of veal.

Bake the bones and vegetables until golden brown, add a little flour to bind. We take to a casserole and add a jet of red wine, water and salt. Once it boils, we remove the foam from the surface. Pour the reduction and decorate with mago jam and rosemary.
